Peachy Grilled Chicken

Ingredients


3 medium peaches, peeled & sliced or 1 (15 oz.)can light peaches, lightly drained


1 Tbs. extra-virgin olive oil


1/2 Tbs. honey


1 1/2 lbs. boneless skinless chicken breast halves or chicken tenders


Coarse salt & freshly ground black pepper


Directions


Place the peaches in a food processor and process to a smooth puree. Add the oil, honey, and salt & pepper and process briefly to blend; transfer to a large resealable plastic bag. Add the chicken pieces and close, squeezing out the air. Marinate for at least 1 hour. Heat grill to medium; lightly oil grates. Lift chicken from marinade shaking off excess; discard marinade. Grill until an instant read thermometer inserted in thickest part of chicken registers 165 degrees, 5 to 8 minutes per side. Remove from grill. Tent loosely with aluminum foil; let rest 5 minutes before serving. (Serves: 4)
