Sweet Potato and Sausage Soup

8 oz. onion; small diced

4 oz. carrot; peeled and small diced

4 oz. celery; small diced

3 garlic cloves; minced

6 large sweet potatoes (yams), peeled and quartered

64 oz. chicken or vegetable stock

1 Tbs. olive oil

1 lb. Jones sausage; browned and crumbled

Salt and black pepper, to taste

chives; minced, as needed


Begin by seasoning and sweating the onion, celery and carrots in the oil over medium-low heat for about 10 minutes or until all ingredients are tender; do not allow any vegetables to gain brown color as this will darken the color of your soup. Once vegetables are ready, add the sweet potatoes and stock. Season. Turn up the heat and bring to a light boil, then turn the heat back down to low and simmer until the sweet potatoes are fork tender (that means that you can pass a fork through it with little pressure). Once fully cooked, strain the liquid from the solids. Keep separate. Call in your blender. Fill the blender about 75% full of solids, then JUST TOP OFF with the stock from cooking. Blend on low speed first until a semi-liquid consistency, then crank it up and blend for about one minute on high. If done correctly, the soup should be silky smooth. Add in the browned sausage. Do not season beyond this point due to the seasonings already in the sausage. Sprinkle with chives. Makes 1.5 gallons.
