Thai Style Rice and Shrimp Wraps

1 bag Success® Jasmine Rice or Success® White Rice
1 (15 oz.) can light coconut milk
1 cup salad shrimp, cooked
1 each mango, peeled and diced small
1 green onion, minced
2 Tbs. fresh cilantro leaves
2 Tbs. roasted salted peanuts, chopped
1 Tbs. sesame oil
1 Tbs. seasoned rice vinegar
1 tsp. gluten free soy sauce
1 tsp. green curry paste
4 each burrito size, gluten free spinach tortillas, warmed
Gluten free prepared peanut sauce, optional
Prepare rice according to package directions, substituting coconut milk for 2 cups of the water. Place cooked rice in a large bowl and stir in remaining ingredients (except tortillas) until well combined. Equally divide mixture and spoon on warm tortillas. Roll up and serve. Serve with prepared peanut sauce, if desired. (Yield: 4 servings)
