Baked Rice Pudding with Lemon

1/3 cup Carolina® White Rice
1/3 cup sugar
1-quart milk
1/2 tsp. salt
1 tsp. vanilla extract
1/2 cup light cream
Lemon rind, grated (optional)
Raisins (optional)
Preheat the oven to 325°F. In a 1½-quart casserole dish, combine rice, sugar, milk, salt, and vanilla. Bake for 1½ hours, stirring occasionally. Add light cream and bake an additional 30-minutes, without stirring. Cool until pudding has a creamy consistency. (Yield: 6 Servings)
