Omelet Stuffed Bell Peppers

2 medium bell peppers, halved & seeds removed
8 eggs, lightly beaten
1/4 cup milk
4 slices bacon, cooked & crumbled
1 cup shredded cheddar
2 Tbs. chives, finely chopped (more for garnish if desired)
Coarse salt & fresh ground black pepper
Preheat oven to 400° F. Place halved peppers in a large baking dish and bake 5 minutes. Meanwhile, beat together eggs & milk. Stir in bacon, cheese, chives & season with salt & pepper. Remove peppers from oven & will with egg mixture. Return to oven for 35-40 minutes more or until eggs are set. Garnish with additional chives if desired and serve. (Yield: 4 servings)
