Greek Salad Wraps

4 Rudi’s Gluten Free Spinach Tortillas
Gluten free creamy Caesar salad dressing
1 head Romaine lettuce or your favorite lettuce
4-5 medium roma tomatoes, sliced
1 cucumber peeled and sliced
3/4 green bell pepper, diced
1/3-1/2cup red onion, diced
1 cup kalamata olives pitted and sliced
¾ cup pepperoncini, sliced
1 (4oz.) container crumbled feta cheese
Spread gluten free Caesar salad dressing on each wrap to the edges. Place 3-4 lettuce leaves on each wrap. Add sliced tomatoes, cucumber, bell pepper, red onion, olives, pepperoncini, and Feta cheese in amounts you desire. Roll up as tightly as possible and secure with long toothpicks or skewers. (Yield: 4 servings)
